Welcome to a Healthy Foods Edition of Food Porn, brought to you by The Burrow - some friends of ours told us about their vegetable spiralizer, and how it made really great vegetable spaghetti, linguine, etc. - they have a hand held one, and, being lazy, we decided to look for one for our Kitchenaid - then choked on the price ($154) - so we looked for the hand powered ones, and found a 5 blade unit that suction cups to the counter ($25 on Amazon) - and it works amazingly well, with very little effort - we tried making some zucchini spaghetti - and two medium zucchini made enough for two meals for both of us -
we sauteed thinly sliced mushrooms and sweet vidalia onions in just a little olive oil, seasoning them with Himalayan Pink Salt, black pepper, minced garlic, and some French thyme. When this was almost done, we added some fresh baby spinach, roasted sweet red peppers, a little splash of chardonnay, and some roasted chicken, along with the zucchini spaghetti, covered it and let it simmer for about 2 minutes - we served this with a drizzle of earthy and robust Black Truffle Oil, and a little nutty parmasan cheese -
it was very flavorful, and the zucchini spaghetti has a nice toothiness that makes you forget that it's not really pasta. After that healthy meal, I don't even feel like I need a nap!
