Cheesecake

Here is the recipe for my Cheesecake –

(all ingredients must be at room temperature for smoothness)

Filling

2 8 ounce packages of Cream Cheese

1 can sweetened condensed milk

1 16 ounce container sour cream

2 eggs

1 Tablespoon vanilla

Crust

1 ¼ cups graham cracker crumbs

1 stick of unsalted butter

1 cup sugar

To make the crust – preheat oven to 450 degrees. Melt butter and combine with the other crust ingredients, mixing well. Press into a 10 inch springform pan, making sure to come up the sides at least 1½ inches. Bake in oven for about 3 minutes to set the sugar, then set aside.

To make filling - put cream cheese in a bowl and beat until smooth (about a minute). Add the sweetened condensed milk and beat until smooth and completely combined. Add the sour cream, and again beat until completely smooth. Then add one egg at a time and beat until smooth.

Pour the filling into your prepared crust, and bake at 450 degrees for the first 10 minutes, then turn the oven down to 300 and bake for an additional 30 to 35 minutes. Chill the cake for at least 4 hours before eating.

To make a 9x13 pan, double the recipe.
